Powder restaurant is a proud partner in Utah Green Business Association. Our variety of sustainability practices include:

  • Being 95% plastic free
    • Plastic straws have been replaced with paper, recyclable ones
    • To-go containers are made of 100% recyclable materials
  • Purchasing meats, cheese and vegetables through local farms
  • Utilizing the two beehives are located on the hotel grounds
    • Produced honey is used in the dishes, cocktails and throughout the hotel as much as possible
  • Working with local company, Wild Harvest Farms, to compost fruits, vegetables, eggshells, newspaper and more

Meet the Chef

Waldorf Astoria Park City welcomes Executive Chef Hermann Schaefer to Powder. Chef Hermann was previously the Executive Chef and Director of Food and Beverage at Hilton San Diego Resort and Spa before joining us in the mountains. Hailing from Austria, Chef grew up working and living on the site of his family’s restaurant and winery. The family operation has grown into the largest organic fruit juice company in Europe, still owned and operated by the Schaefer family.
